Almond Crumble

Makes 12 squares
This reminds me a bit of Greek halva, but yummier. It can be a bit crumbly depending on the type of nut butter you use.

250ml (1 cup) store-bought organic almond or peanut butter or chocolate and nut butter
60ml (1⁄4, cup) xylitol
125ml (½ cup) ground flaxseed
125ml (½ cup) almond flour
125ml (½ cup) unsweetened dark chocolate chips (80% dark chocolate, chopped)
2 egg whites, lightly whisked
125ml (½ cup) cashew nuts
125ml (½ cup) almonds
5ml (1 tsp) chia seeds, optional

  1. Preheat the oven to 180°C. Line a 20cm x 20cm baking dish with baking paper.
  2. In a large bowl mix all the ingredients until well combined.
  3. Pour the mixture into the baking dish and press to spread the mixture evenly.
  4. Bake for 15 minutes, leave to cool down and refrigerate for at least 30 minutes before slicing
