Makes 24 small snowballs

3 egg whites
175g desiccated coconut
60g xylitol

  1. Preheat the oven to 150°C. Line a baking tray with baking paper.
  2. In a medium bowl, whip the egg whites with an electric beater until stiff peaks form.
  3. Carefully fold the coconut and xylitol into the egg whites. Scoop tablespoonfuls of the mixture onto the baking tray. Bake for 15 minutes, lower the temperature to 110°C for another 30 minutes to dry out.
